Ingredients
1 package Perdue Fresh Cuts Pre-Cut Diced Chicken Breast
2 large tomatoes, diced
2 bags microwaveable Spanish Rice, heated
2 Tbsp Cajun Seasoning Mix
2 Tbsp vegetable oil
6 Tbps unsalted butter
4 spring onions (scallions), sliced
Directions
  1. Toss the chicken with Cajun seasoning.
  2. In a large skillet, heat the vegetable oil over medium heat.  Add the chicken and saute for 5-7 minutes, until chicken is cooked through. 
  3. Add the diced tomatoes and simmer until heated through.  Add the butter and stir until melted.
  4. To serve, divide rice among 4 bowls.  Spoon Cajun Butter Chicken over rice.  Garnish with sliced spring onions.
