Ingredients
2 salmon fillets
coarse salt
ground pepper
1 c packed fresh basil leaves, thinly sliced crosswise
1 shallot, thinly sliced crosswise
grated zest of half of a lemon
1/2 Tbsp olive oil
Directions
  1. Lightly season salmon fillets on both side with salt & pepper.  Place in a baking dish, about 1" apart.
  2. In a small bowl, combine basil, shallot, lemon zest, lemon juice, olive oil, salt and a pinch of pepper.  
  3. Spread basil miture over the salmon fillets.  Cover with foil and refrigerate for 20 minutes (to allow flavor to marinate).
  4. Preheat oven to 325.  Bake salmon (covered) until opaque throughout, about 20 minutes.
